I don’t believe in throwing away food and that can of pinto beans has been on my mind much too often lately. A few nights ago, I decided to take pinto bean action.
Knowing I could never force myself to eat a can of plain pinto beans, I sliced up and then fried a potato. Then I chopped up some white onion, green pepper and fresh mushrooms.
I emptied the can of pinto beans into a pot, placed it on a burner and added the potatoes, onions, green pepper and mushrooms, cooking over medium heat. I let it come to a boil and considered it done.
As I was eating it, I concluded it didn’t taste that bad. I considered giving the dish a name—maybe “Covington Pinto Deluxe”—but I don’t ever see myself buying a can of pinto beans or ever fixing it again. At least I wasn’t wasting food.
I’ll write another post on Saturday. If I can’t think of anything to write between now and then, I’ll write a post about that can of cream corn that’s also been in my cupboard for too long.
